Vegan Carrot Cake Recipe – is a perfect solution for eating desserts without feeling guilty.

I just can’t live without sweets. Having a sweet tooth, makes me constantly crave for something sweet. So, I always try to experiment in my kitchen and make classic sweet desserts more healthy. This vegan carrot cake recipe is one such successful experiment.

Vegan carrot cake is a perfect cake for any occasion. But I mostly make the carrot cake during winters because I love the warm red carrots that are available in winters. This carrot cake goes well as a tea -time cake as well. Loaded with the goodness of carrot, almonds and oats, this melt in the mouth cake is nothing but bliss.

This vegan carrot cake goes perfectly as a valentines day dessert as well. When love is in the air, it’s almost impossible to stay away from sweets and chocolates. A combination of healthy ingredients, and replacing sugar with honey, make this vegan carrot cake recipe all the more interesting. After all who said that a valentines day dessert cannot be delicious yet healthy at the same time.

Ingredients for Vegan Carrot Cake Recipe

Carrots  – 2 (medium)
Almonds – 1 cup
Oats – 3/4  cup
Whole Wheat Flour – 1 cup
Dark Chocolate chips – 1/2 cup (optional)
Cinnamon Powder – 1 tablespoon
Hot water – 3 tablespoon
Honey – 4-5 tablespoon (depending on the amount of sweetness you want)
Almond Milk – 1 1/4 cup
Baking Powder – 1 teaspoon
Baking Soda – 1 teaspoon
Oil – 1/4 cup

Steps for Vegan Carrot Cake Recipe

  1. Preheat the oven to 180 degrees Celcius
  2. Line the base of the baking cake tin with parchment paper and grease the baking tray with oil on all sides and keep aside.
  3. Then, blitz the almonds in a mixer/ food processor, to form a fine powder.
  4. Once the almonds are done, grind the oats in a fine powder.
  5. In a bowl mix almond powder, oats powder, whole wheat flour, baking powder and baking soda.
  6. Peel and finely grate the carrots. Keep them in a separate bowl. Two medium sized carrots should be around 1 cup (tightly packed) grated carrot. You can also make a carrot puree.
  7. Now, mix the cinnamon powder in hot water.
  8. In a separate bowl mix oil. almond milk, and honey together.
  9. Now add the cinnamon water mix and grated carrots and mix well.
  10. Add in all the dry ingredients and mix well. Remove all the lumps.
  11. Once, the batter is mixed properly, add the chocolate chips and mix again.
  12. Taste the cake batter. If the batter is too thick add some milk. If it’s too runny add some wheat flour. You can also add more honey at this stage
  13. Then, pour the batter into the cake tin and bake for about 45 – 50 minutes.
  14. After about 35 minutes take out the cake from the oven and insert a skewer in the middle of the cake. If the skewer comes out clean, then the cake is ready. If it has some batter sticking, then the cake needs to cook for some more time.
  15. Cool the cake and serve it with or without frosting.

Recipe Notes

  1. As this is the vegan version of the carrot cake, I have used almond milk. You can also use the dairy milk instead.
  2. Instead of honey, you can also use regular white sugar. If you are using sugar, you might need between 1 and 1.5 cups of sugar.
  3. I usually soak cinnamon powder in hot water because I think it enhances the flavor cinnamon.
  4. Adding hot water makes the cake super moist and melt in the mouth. I usually add 1-2 tbsp of hot water to many cakes to make them moist. This trick has always worked for me.
  5. Instead of grinding the almonds, you can use almond flour as well.
  6. If you are using a convection oven, it might take lesser time so, it’s better to check your cake batter after about 20 mins.
